Trenette al Pesto (Pasta From Luca)

If you have seen Disney’s new movie Luca, you probably remember the scene with this dish in it!

Trentte al Pesto

Total Time: 2 hours | Cook Time: 20 minutes


Ingredients:

For the pasta:

- 2 1/2 c. AP flour

- 4 eggs

- 1 TBSP. Olive oil

- pinch of salt


For the rest of the dish:

- 1 jar of store bought pesto

- 8 petite red potatoes

- 2 cups of string beans

- 1/4 c. olive oil


Directions:

  1. First make the pasta. On a clean surface, make a well out of the AP flour. In the center of the well, add your eggs, olive oil, and salt. Use a fork to whisk the wet ingredient while slowly whisking in the flour. You will eventually get a ball of dough. Knead it until very smooth. This will take about 8-10 minutes. Cover in cling film, and chill in the fridge for 30 minutes.

  2. Rinse your potatoes, and put then in a pot. Add water until just covered. Make sure to salt the water. Cook for 15-20 minutes, or until fork tender. Take the potatoes out, and put them in an ice bath. Keep the water for the next step.

  3. Cut the ends off of all the beans. Cook them in boiling water for 2 minutes, take them out, and place them in a bowl of ice water. Chop the potatoes into bite sized pieces.

  4. Take your dough out of the fridge. On a floured surface, divide the dough into 8 pieces. If you have a pasta roller, use that, but if not, you can use a rolling pin. Roll out your dough, and cut into fettuccine sized pieces.

  5. In a large pot of boiling water, boil your pasta. This will take no more than a minute. The pasta will float when done. TAKE OUT ONE CUP OF PASTA WATER BEFORE DRAINING! In the same pot with the heat off, add the pasta, jar of pesto, cup of pasta water, and 1/4 cup of olive oil. Mix it all together.

  6. To serve, top the pasta with the potatoes and beans. You can even add cheese if you would like. Enjoy!
