Cheese Soufflé

This recipe is from my new series on Instagram called Dishes From Disney Movies. The dish is from the movie Beauty and the Beast. Cheese Soufflé

Total time: 45 minutes

Bake time: 30 minutes


Ingredient:

- 1 1/2 TBSP. Salted butter, plus some for greasing your dish

- 1 1/2 TBSP. AP flour

- 1/2 c. Whole milk

- 2 eggs, seperated

- pinch of salt

- pinch of pepper

- optional: if you like heat, small pinch of cayenne

- 1/3 c. Cheddar cheese (you can use any type of cheese)

- 1/4 tsp. Cream of tartar


Directions:

1. Grease a small baking ramekin with butter. The ramekin should be 3-4 inches deep and 4-5 inches in diameter. Preheat the oven to 450 degrees F.


2. Heat the whole milk for 30 seconds in a microwave. Melt the butter on medium-low heat. Once melted, whisk in flour. Let cook for 3 minutes, while whisking constantly. Pour in the warmed milk, and stir until thickened. Add in the 2 egg yolks, salt, pepper, and the optional cayenne. WHISK CONSTANTLY. Turn off the heat, and add in the cheese. Mix until combined.


3. While the cheese mixture is cooling, beat the 2 egg whites in with the cream of tartar until it reaches medium stiff peaks. If the cheese mixture thickened, you can add milk to thin it out. Add a small scoop of the cheese mixture into the egg white mixture. Fold until combined. Now pour the egg with mixture into the rest of the cheese mixture. Fold until there are no white streaks left. Pour into the greased ramekin, about 1 inch from the top. Drop the oven temperature to 375F, and bake for 30 minutes. Do not open the oven until it is cooked! Eat immediately because once it comes out of the oven, it will start deflating. Enjoy!
