Strawberry Crepe Cake

For my blog’s 1 year anniversary, I made this Strawberry Crepe Cake with my sister!



Strawberry Crepe Cake


Ingredients:

- 6 tablespoons salted butter, melted

- 3 cups milk

- 6 eggs

- 2 ¼ cups flour

- 7 tablespoons sugar

- 2 tsp. Pure vanilla extract

- 3 c. Whipping cream

- 1/3 c. Powdered sugar

- 2 c. Strawberries, chopped


Directions:

1. Mix together the salted butter, pure vanilla extract, eggs, and granulated sugar. Mix in one third of the flour. Now mix in half of the milk. Mix in another third of the flour. Mix in the other half of the milk and the final third of the flour. The order should be flour, milk, flour, and milk.

2. In a small non stick pan on medium-low heat, add in a little bit less than 1/4 c. of the batter onto the pan. Immediately swirl the batter all over the pan. Let cook until the top is firm You do not need to flip these. When fully cooked, flop the crepe onto a paper towel. Continue this with all of the batter.

3. To make the whipped cream, whisk together the whipping cream and powdered sugar. To assemble, place on crepe on a platter and top with a bit of whipped cream. After a few layer, and a layer of strawberries. Continue doing this until you are finished. Enjoy!
