These cookies are perfect to make for the last treat of Fall! They are soft, gooey and delicious with the crunch of the pecans!
Pumpkin Chocolate Chip Pecan Cookies
Total Time: 25 minutes | Bake Time: 12 minutes
Ingredients:
- 1/2 c. Salted butter, softened
- 1 c. Granulated sugar
- 2 eggs
- 1 c. Pumpkin purée
- 2 c. AP flour
- 4 tsp. Baking powder
- 3 tsp. Cinnamon
- 1/4 tsp. Nutmeg
- 1/4 tsp. Ginger
- sprinkle of salt
- 1 c. Milk chocolate chips
- 1 c. Chopped pecans
Directions:
1. Preheat your oven to 350°F. Line 2 baking trays with parchment paper. Cream together your softened butter and granulated sugar. Add one egg at a time until fully combined. Mix in the pumpkin purée.
2. In a separate bowl, whisk together AP flour, baking powder, cinnamon, ginger, nutmeg, and salt Mix the dry ingredients into the wet. Fold in your chopped pecans and chocolate chips.
3. Scoop the cookies on the baking trays. Bake for 12-14 minutes and let cool on a cooling rack. Enjoy!
