Hey guys, to kick off the Fall season, I made Pumpkin Spice Crinkle Cookies. I hope you enjoy this recipe!
Pumpkin Spice Crinkle Cookies
Bake Time: 15-17 minutes | Total Time: 40 minutes
Total: 18 cookies
Ingredients:
• 2 cups AP flour
• 3 tsp. Baking Powder
• 1/2 tsp. Salt; 2 pinches
• 1 1/2 TBSP. Pumpkin Pie Spice
• 1 15 oz. can Pumpkin Purée
• 1 egg
• 1 tsp. Pure Vanilla Extract
• 1/2 cup Granulted Sugar
• 1/2 cup Light Brown Sugar
• 1/2 cup Vegetable Oil
For the coating:
• 1/2 cup Powdered Sugar in one bowl
• 1/4 cup Granulated Sugar in another bowl
Preheat oven to convection bake 350° F. Combine AP flour, salt, pumpkin pie spice, and salt. Set aside.
In another bowl, whisk together pumpkin purée, the egg, pure vanilla extract, granulated sugar, light brown sugar, and vegetable oil.
Fold in your dry ingredients into your wet ingredients until just combined.
Line two baking sheets with parchment paper.
Scoop a dough ball. The dough will be a looser consistency, so do not be alarmed. Coat in a thin layer of granulated sugar. Then coat in a thicker layer of powdered sugar. Place on a baking sheet. Continue until all of your dough in coated. Bake for 15-17 minutes. Let cool completely. Enjoy!
