Pumpkin Bread
Ingredients
- 3 ½ c. AP flour
- 2 tsp. baking soda
- 1 ½ tsp. salt
- 2 ½ TBSP. pumpkin pie spice blend
- 3 c. granulated sugar
- 15 oz. pumpkin puree
- ½ c. vegetable oil
- 1-2 TBSP water
- 4 eggs
Add-ins (optional)
½ c. walnuts and ½ c. golden raisins or ¾ c milk chocolate chips
Directions
1. Pre-heat oven to 350F on convection. Grease muffin tins with non-stick spray.
2. Mix sugar, pumpkin puree, oil, water, and eggs in a large bowl. Whisk together until sugar is dissolved.
3. Mix flour, baking soda, salt, and pumpkin pie spice blend.
4. Slowly add dry ingredients to wet. Fold until you can make a figure 8 without it breaking.
5. With an ice cream scoop, add 1 scoop of batter to each muffin tin. Fill to about ¾ of the tin. They will rise. Now is the time to add toppings.
6. Bake for 20-25 minutes, then let cool for 5 minutes in the tin. Put the on a cooling rack until completely cool. Enjoy!
