Peanut Butter Cookies


Peanut Butter Cookies

1/2 c. all vegetable shortening

3/4 c. creamy peanut butter

1 1/4 c. firmly packed light brown sugar.

3 TBSP whole milk

1 TBSP pure vanilla extract

1 egg

1 3/4 c. AP flour

3/4 tsp. salt

3/4 tsp. baking soda


Preheat oven to 350 degrees F. Mix shortening, peanut butter, brown sugar, milk, and vanilla on medium speed if you’re using an electric mixer.


When mixture is well mixed, add the egg. Mix still just blend it and no snotty egg white is visible. Next add flour, baking soda, and salt. Roll 2 teaspoon balls in the palm of your hands.


On a parchment paper lined baking sheet and place the balls 2 inches apart. Take a fork and grease it very well. Press down on the down. Turn 90° and repeat. This will give you the classic peanut butter cookie indent.


Bake them for 8-10 minutes. Do not over bake them because they will become too hard.
