Peach Crumble Cookie

Over the summer, Crumbl Cookies has been trending all over social media. I decided to make a copycat version of one of their recipes!




Peach Crumble Cookies

Ingredients:

For the cookies:

- 1 c. bread flour

- ¾ c. AP flour

- 1 tsp baking soda

- 1 c. (2 sticks) salted butter, softened

- 1 c. dark brown sugar packed down

- ½ c. granulated sugar

- 2 tsp vanilla extract

- 1 large egg

- 1 large egg yolk

- 1 TBSP ground cinnamon

- 1/4 tsp. Ground ginger


For the topping/crumble:

- 3 peaches (or 1 can of peaches)

- 1/4 c. Softened butter, salted

- 1/4 c. Granulated sugar

- 1/2 TBSP. Ground cinnamon

- 1/3 c. AP flour


For the icing:

- 1/2 c. powdered sugar

- 1 TBSP. milk


Directions:

1. Preheat oven to 350°F. Line a baking tray with parchment paper. Cream together butter, brown sugar, and granulated sugar until fluffy.


2. Add in your eggs, vanilla extract, and egg yolks. Mix until fully combined. Add is bread flour, AP flour, baking soda, cinnamon, and ground ginger. Mix until combined. Set aside and make the crumble topping.

3. Cream together sugar and butter. Add in the flour and cinnamon. Scoop a large amount of dough into your baking sheet. Flatten the top down just a bit. Add 3 peach slices to each cookie followed by a hefty sprinkling of the crumble. Bake 10-15 minutes or until they are golden brown on top. Let them cool completely.

4. To make the icing, whisk together the powdered sugar and milk. If it is too thin, add more sugar. If it is too thick, add more milk. On you COMPLETELY cooled cookies, drizzle the tops of them with icing and enjoy!
