Peach Cobbler: Part 1

Peach Cobbler

Filling:

  • 8 peaches, ripe

  • 3 TBSP granulated sugar

  • 1/4 c. medium brown sugar

  • 2 TBSP cornstarch

  • 2 tsp. freshly squeezed lemon juice

  • 1/2 tsp. pure vanilla extract

  • 1/2 tsp. nutmeg

  • 1/2 tsp. cinnamon

  • 1/4 tsp. salt

  1. Mix granulated sugar, brown sugar, cornstarch, lemon juice, pure vanilla extract, nutmeg, cinnamon, and salt together in a bowl. Whisk until smooth.

  2. Slice the peaches and remove the skin. If you want to leave the skin on, that is totally okay. Put peaches in strainer over another bowl. Let sit for 30 minutes. Stir peaches every 5 minutes.

  3. Add 2 TBSP peach juice into the sugar spice mix. Pour mix over peaches. Mix very well. Make sure every slice of peach is coated.

  4. Cover bowl with cling film. Refrigerate for at least 1 hour. No more than 4 hours though.

Batter:

  • 1 1/2 c. AP flour

  • 1 1/2 tsp. baking powder

  • 6 TBSP granulated sugar

  • 1/4 tsp. cinnamon

  • 1/4 c. salted butter, melted

  • 1/2 c. heavy cream

  • 1/2 c. peach juice

  • 1/2 c. chopped pecans

  • 6 TBSP cold, softened butter cut into tiny cubes.

  1. Whisk together AP flour, baking powder, granulated sugar, and cinnamon.

  2. Let the melted butter cool down a bit. While whisking, add a small drizzle of heavy cream to the melted butter. This will temper the butter. While whisking, drizzle the butter into the rest of the heavy cream. Add peach juice.

  3. Slowly fold the dry ingredients in with the wet 1/3 at a time. When the dry ingredients are fully mixed in, add the cold butter cubes. Fold in until evenly distriputed.

Assembly:

  1. Preheat oven to 375°F convection bake. Lightly grease a cast iron skillet or baking dish with butter. If you don't have butter, skip this step.

  2. Pour the peach filling into your greased pan. Scoop batter on top. Leave some spots where fruit is showing. Plop some cold cubed butter throughout the peach mixture too!

  3. Bake for 30 minutes. Cool slightly and enjoy!
