Iced Almond Cookies

Iced Almond Cookies


- 2 eggs

- 6 TBSP melted margarine

- 1/2 c. Granulated sugar

- 1 tsp. Almond extract

- 2 c. AP flour

- 2 tsp. Baking powder

- pinch of salt


- 1 1/2c. Powdered sugar

- splash of whole milk

- 1/4 tsp. Almond extract


- Chopped almonds


1. Sift together AP flour, baking powder, and salt. Set aside.


2. Mix together eggs, margarin, sugar, and almond extract together. Incorporate the dry and wet ingredients. Scoop out 2 tsps of dough, and roll the dough into a smooth ball. Place the ball on a parchment lined baking sheet. Place in the freezer for 15 minutes. Bake at 350 degrees Fahrenheit for 9 minutes.


3. Chill the cookies completely on a baking rack. Whisk together powdered sugar, milk, and almond extract until no lumps remain. Dip the cookies in the icing. Sprinkle the tops of each cookies with chopped almonds. Enjoy!
