Grandmother Jennie's Tea Cakes

Here is another family recipe I found and decided to make! I hope y'all enjoy!

Grandmother Jennie's Tea Cakes

Total time: 20 minutes/ Bake time: 9 minutes/ 45 servings


Ingredients

- 1/2 c. salted butter, softened

- 1 1/4 c. granulated sugar

- 2 large eggs

- 1 c. AP flour

- 1 1/2 tsp. baking powder


If you want chocolate stuffed ones, get some milk chocolate chips.


Directions:

1. Pre-heat oven to 400°F convection bake. Lightly grease two baking sheets.

2. Cream the butter and sugar until fluffy. About 5 minutes.

3. Add the eggs when, butter and sugar is creamed. Mix vigorously.

4. Sift AP flour and baking soda together. Add half of dry mix into wet mix. When fully combined, mix in the second half of dry mix.

5. Use a 2 tsp. scoop to scoop out dough. Using the palms of your hands, roll the ball of dough into a smooth sphere. Place on baking sheet. Keep each tea cake 1 inch apart.

Chocolate stuffed:

Take the 2 tsp. ball of dough, flatten it in the palm of your hand, place a chocolate chip in the middle of it, and fold it up. Place on baking sheet.

6. Bake for 4 minutes. Flip the trays around and bake for another 5 minutes. Cool on cooling rack. Enjoy!
