Empire Biscuits From Brave

This recipe is from my new series on Instagram called Dishes From Disney Movies. The dish is from the movie Brave. Every Tuesday in March, I will be posting a new recipe from a Disney movie at 11:00am CST. One my Instagram, there is a video of me making these. You can DM me on Instagram if you have any questions!

Empire Biscuits

Total time: 1 hour

Bake Time: 20 minutes

Ingredients:

Biscuit:

- 2 c. AP flour

- 1 c. Salted butter, softened

- 1/2 c. Granulated sugar

- 1 egg

Icing:

- 1 c. Confectioner’s sugar

- 2-4 TBSP. Freshly squeezed orange juice

Decoration:

- Seedless jam of your choice (I used strawberry)

- dried cherries

Directions:

1. Pre-heat your oven to 375 degrees F, convection bake. Line a baking sheet with parchment paper.

2. Mix the butter until creamy, but not fluffy. Add the granulated sugar. Mix until combined.

3. Add the AP flour and the egg to the mixture. Mix it all together until a clump forms. You can use your hands to mix it up now.

4. Pour it out onto a floured surface. Roll the dough out with a floured rolling pin. You will want the dough to be a 1/4 inch thick. You can use bottle caps to find the perfect thickness. Use a circular cookie cutter about 3 inch in diameter. Cut out an EVEN amount of biscuits. Carefully put the cut out dough onto the baking sheet lined with parchment paper. Chill in the fridge for 20 minutes.

5. Bake the biscuits for 15-20 minutes. Cool on a cooling rack, and set aside. While the biscuits are cooling, make the icing.

6. Whisk the orange juice and confectioners sugar together until no lumps remain. If it is too thin, add more confectioners sugar. If it is too thick, add more orange juice.

7. Time for assembly. Take one biscuit, and spread a thin layer of your seedless jam all over the top of it. Dip the top of one biscuit in the orange icing. Carefully place the biscuit with the orange icing onto top of the biscuit with the jam spread on it. The icing should be facing up. Place a singe dried cherry on top. Do this with the rest of the biscuit. Once you finish that, you are done. Enjoy!
