Beignets

Hello everybody! This week on Dishes From Disney, I made Tiana’s beignets from The Princess and The Frog. Check out my Instagram to watch a video of me making them!



Beignets

Ingredients:

- 1/2 tsp. Dry active yeast

- 1/4c. Lukewarm water (Around 100-110 degrees)

- 1/4c. Granulated sugar

- 2 TBSP Crisco vegetable shortening

- 1/2 tsp. Salt

- 1/2c. Whipping cream

- 1 large egg

- 4c. AP flour

- 1/2c. Boiling water

- Vegetable oil for frying

- Powdered sugar

- honey


Directions:

1. Sprinkle the yeast over the warm water. Don’t mix it, just let it sit on top. Let sit for 5 minutes.


2. In a large mixing bowl, combine granulated sugar, shortening, salt, whipping cream, egg, flour, and boiling water. Mix it all together then add the yeast mixture. Use a dough hook on a stand mixer if you have one. Mix until just combined. Over mixing willl lead to a dense beignet. Cover with a towel and let sit for 30 minutes In a warm place.


3. On a lightly floured surface, roll the dough until 1/4 inch thickness. Use a cookie shutter about 3 inches in diameter. Push down and pull the cutter straight up. Do not twist it. Cover the cut out dough with a towel in a warm place. Let sit for 1.5-2 hours. Your dough should have doubled in size.


4. About 10 minutes before the dough is ready, get out a saucepan, vegetable oil, a candy thermometer, some type of straining spoon, and a cooling rack lined with paper towel.


5. Heat the oil to 350°F. Only fry two beignets at a time. Fry each one about 1.5-2 minutes per side. Take out of the oil, and place them on the paper towel. If the outside is turning dark brown but the inside is still doughy, turn your stove down because the oil is too hot. Immediately top the beignets with honey and powdered sugar. Enjoy!


How to properly dispose of the oil:

Wait until the oil is completely cool. Pour into a zip top bag and throw in the trash bin. Do not pour the oil down the sink!
