Banana Pudding

My cousin came over to hang out at my Mimi's new house. Earlier that week, I asked her what her favorite dessert was. She obviously responded with banana pudding. I was then off brainstorming and testing recipes!

Banana Pudding

Total time: 20min / Yields 20 servings

Ingredients:

  • 3 very spotty bananas

  • 3 fully yellow bananas

  • 3 large egg yolks

  • 3 TBSP granulated sugar

  • 3 TBSP cornstarch

  • 1/4 c. sweetened condensed milk

  • 3/4 c. whole milk

  • 1 TBSP pure vanilla extract

  • 1 TBSP cold, salted butter

  • 1/2 box vanilla wafer cookies

Whipped cream:

  • 1 1/2 c. heavy whipping cream

  • 1 TBSP powdered sugar

  • 1 tsp. pure vanilla extract

Directions:

  1. Blend the 3 spotty bananas in a blender until smooth.

  2. Whisk together egg yolks, granulated sugar, and cornstarch until creamy. Slowly whisk in sweetened condensed milk until combined. Mix in blended banana until smooth. Slowly add in the whole milk.

  3. Pour mix into a sauce pan. Crank the heat to medium low and stir until thick. 10 minutes. The first few minutes will be very slow, then the last 1-2 is where the thickening happens. If you mix is not thickening, turn the heat up to medium. Be patient!

  4. Pour thickened mix through a sieve. Whisk in pure vanilla vanilla extract and cold, salted butter. Cover in cling film and chill for a few minutes.

  5. Start whisking the heavy whipping cream. When thickened, add in the pure vanilla extract and powdered sugar. Whisk until fluffy. This is your whipped cream (optional).

  6. Slice the 3 fully yellow bananas into round coin shapes. Take out the vanilla wafer cookies.

  7. You can serve this however you would like. I layered mine in a trifle dish. Enjoy!
