Morning Glory Muffins are filled with delicious things such as apples, carrots, walnuts, and raisins. They are completely customizable as well. If you wanted, you could add coconut, apricots, and other fillings.
Morning Glory Muffins
1/2 cup raisins
1 c. AP flour
1/2 cup brown sugar
1 tsp cinnamon
1/4 tsp ginger
1 tsp baking soda
1/4 tsp salt
1 cup peeled, grated carrots
1/2 cup chopped apple or
1/2 cup chopped walnuts
2 large eggs
1/3 cup vegetable oil
1 tsp pure vanilla extract
2 TBSP water
Preheat oven to 360*F convection bake. Lightly grease 10 cups of a 12 cup muffin pan.
In a large bowl whisk together the flour, sugar, cinnamon, ginger, baking soda, and salt.
Mix together the carrots, apples, raisins, and walnuts.
In a separate bowl beat together the eggs, oil, vanilla, and water. Add to the dry mixture and stir in the carrots, apples, raisins, and walnuts.
Scoop batter into the prepared wells. They will be nearly full but that’s ok.
Bake for 15-20 minuets.
Remove the muffins and let cool before transfer to cool rack.
