Banana Nut Muffins
Total Time: 55 minutes/ Bake Time: 35-40 minutes
Ingredients:
- 1/2 c. margarine
- 1 c. granulated sugar
- 2 eggs
- 3/4 c. (2) very ripe mashed bananas
- 1 1/4 c. cake flour (Swan's)
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. chopped walnuts
Directions:
1. Pre-heat oven to 325°F convection bake.
2. Cream margarine and sugar until fluffy. About 3-5 minutes. Scrape down sides every minute. Meanwhile, sift cake flour, baking soda, and salt together.
3. In the creamed mixture, add in one egg at a time, making sure each one is well mixed. Fold in mashed bananas to the creamed mixture after eggs are combined. The batter may separate a little here (little white specks). Don't worry! when baked, no one will know, and it will not make a difference!
4. Now fold in dry ingredients and walnuts until just mixed. Pour into a muffin pan lined with cupcake liners.
5. Bake at 325° for 30-35 minutes, then lower the temperature to 315° until you can stick a toothpick in the middle of a muffin (3-5 minutes). If it comes out clean, take it out. There may be a banana chunk on it. As long as there is no batter on it, it is fine!

6. Allow the muffins to cool on rack for 10 minutes. Enjoy!
